Honey made from honeydew, a sugary substance produced by insects sucking the sap from forest trees and found by bees on leaves and barks. Dark amber in colour, it has a caramel and resinous taste, not very sweet, leaving a velvety sensation on the palate. Its low glucose content makes it an ideal sweetener for low-calorie diets. Its high concentration of minerals, trace elements, vitamins and amino acids make it a powerful natural tonic, ideal in summer or after exercise to replenish substances lost through sweating.
How we get it
We follow organic and bee-friendly beekeeping practices that focus on preserving the environment and protecting biodiversity. We breed our bees in full respect of their biorhythms and to protect them from disease we treat them with natural systems, without the use of synthetic chemicals. We use Kenya top bar hives, which replicate the hollow environment of the natural hive and encourage spontaneous bee behaviour. We place the hives in unspoilt areas with spontaneous flora, away from sources of pollution from agriculture, industry or towns.
